Ravishing Radish Microgreens

Radish Microgreens are a favorite for adding flavor to dishes ranging from salads to stir fry to your favorite Mexican dishes. Because they are crunchy and add a bit of spice, radish greens are a perfect way to liven up scrambled eggs or your vegetable smoothies. My favorite way to use radish greens is to sprinkle them liberally on a burger fresh off the grill and then add mustard and onion. The mix of flavors is intense and absolutely delicious! In addition to adding flavor, radish greens have been shown to contain 40x (yes, 40!) the nutrients per serving of a fully grown radish! Since they are so full of good stuff including lots of antioxidants, radish greens can provide an insurance policy against all the germs floating around this time of year.

Radish greens can be grown from any variety of radish seeds. Interestingly, no matter which seeds you use to grow them, they taste roughly the same! They are best grown under lights and require a certain amount of daily care, but grow quickly and can be ready for harvest within about 8-10 days. When you get your. microgreens home, they will not be washed as this will cause premature spoilage. That’s why it’s important to check that your grower does not use chemicals to grow their greens. Store your greens in an airtight plastic (unfortunately) container in the crisper drawer of the refrigerator. It helps to put a paper towel in the container to absorb extra moisture and wash the greens as you use them to prolong their life. When properly preserved shortly after harvest, radish greens can be expected to last up to 10 days. I like to sell my greens within 1 day of harvest to ensure freshness.

Spotlight on Sunflower Greens 🌻

Of all the greens I grow, I find sunflower greens to be the most accessible for people new to the microgreens world. They are crunchy and have a delicious nutty flavor. They are larger than most other microgreens so are easy to work with. As with most greens, sunflower greens contain many nutrients. In fact, the leaves of a microgreen plant have been found to contain five times the nutritional value of the same leaf on a mature plant!

Specifically, sunflower greens contain high levels of vitamins K, A, C, B6 and folate as well as iron, protein, and Omega 3’s and 6’s. They support good immunity and energy and provide a complete source of amino acids. A serving of microgreens, about 100 g, contains only 27 cal yet provides 88% of the daily value for iron! That makes them excellent for people eating a plant-based diet who are in need of iron sources.

Selenium, found in sunflower greens, regulates hormone levels and has been found to mitigate thyroid disease. Also, the vitamin E found in sunflower greens has been found to protect against Alzheimer’s progression. As you can see, these little microgreens are mighty indeed!

I like to eat sunflower greens fresh out of the fridge after a quick rinse. Another delicious way to enjoy sunflower greens is to balance one or two on a slice of apple and drizzle a bit of balsamic vinaigrette over the whole thing before digging in. Delicious!

A Shift in Focus

Hi friends! When I began this blog last spring, I envisioned it as a place where I could share my experiences while setting up my homestead. This has included gardening, food preservation and alternative energy systems along with musings about life, and it has been a good way for me to chronicle my life and connect with all of you.

Now, however, I find my focus at the homestead shifting toward my growing (get it?) Microgreens business and I have decided to shift this blog accordingly. I plan to include occasional thoughts about life in addition to growing strategies, nutritional information and menu planning using greens.

I will also be scaling back to once-weekly posts rather than the 3-4 posts per week I have been aiming for since I began, in order to focus on my new growing and business opportunity.
